Background
The Women’s Cooperative Association of Baskenta is a newly created cooperative that is open to all of Baskenta’s women. The initial focus of cooperative is the commercial production of 'mooni' (food storage in Arabic), to be sold at the local market. This project consisted of two parts: the purchase of equipment for the food production, which included a pH meter to measure acidity, two refractometers to measure consistency, an industrial gas burner, and kitchen utensils; and a 5-day training course administered by the Atayeb al Rif Cooperative. Of those 5 days, one was spent training women on food safety and HACCP compliance, three days on hands-on training on pickles, jams, pastries, and dry fruit production, and the last day was devoted to team building and cooperative management. The cooperative uses the area’s agricultural produce, cooperating with such associations as the 'Agriculture Cooperative of Baskenta: Al Marj Al Akhdar ' to purchase the fruits and vegetables that they need.
